You probably havent gotten an answer because it isnt a simple one. You will need a program like iBrickr to access files on your iPhone. You will have to find the wallpaper for your favorite theme using iBrickr. Path var/root/Library/SummerBoard/Themes/"theme name". Once you navigate to this path in iBrickr you will see a file called wallpaper.png. Save that to your PC then delete it from your phone. Then save the wallpaper you want to use behind your icons into that theme folder by uploading the wallpaper file using iBrickr into the path listed above. Then turn theme wallpaper on in summerboard and you should have your wallpaper behind your icons whenever you use that theme. Then set your wallpaper through your iPhone settings page and this will be your unlock screen. Hope this all made sense.

being that ibrickr is not supported with firmware 1.1.1, i take it winscp will work just as well? thx for the response though, it makes total sense, so if i use a picture from my pictures folder on the pc, and put it under the theme i want it to be under, will it automatically be a .png file?

Actually, Ive been using iBrickr for a while now with 1.1.2. I also used it with 1.1.1. Everything seems to work fine except ringtones. But all the file manipulation still works like a charm.
With that said, any program capable of removing and uploading files to the iPhone should work for this, as long as you follow the path above.

Ibrickr keeps asking me to downgrade, I obviously don't wanna so if I keep continuing will it downgrade without my permission?

Well, iBrickr never did that to me so Im not 100% sure. But just given what limited amount I know about this stuff... I highly doubt iBrickr can automatically downgrade your phone. iBrickr doesnt do anything to the firmware that I am aware of.
If you are feeling uncomfortable then I would use a different app to access that wallpaper file. As for what app to use... that my friend I do not know. Ive only always used iBrickr. I see other people using WINscp but Im not sure what it does to be honest.

Trust me Winscp is the one. It is free and super easy to use. And it works w 1.1.2. Plus if you are going to add NES emulator, or truly customize your phone with new images etc. your going to want it.

Once you set a wallpaper via the iphone, it creates a file called LockBackground.jpg. Once you have chosen and set what wallpaper you like for your homescreen, go into /Var/Root/Library/Lockbackground.jpg and replace that file with whatever wallpaper you wish to have for your locked background. Just make sure you rename it to the filename posted above, and convert it to a jpg file. Reboot and it will be there. ibrickr never gave me a problem with 1.1.2 so it's weird that it asks you that in 1.1.1. Not sure on that part.

Not sure about winscp as I have never used it. But I assume it works similarly to all the other programs available to enter the iphone. Yes, rename that fire file to LockBackground.jpg. Capitalize the "B" as well as the "L." Make sure the file is a jpg, not just renamed to one. Then replace the file via the program. I downloaded the file to have a backup, and then I deleted the original LockBackground.jpg entry. Then, I just uploaded my choice (in your case the fire.jpg file renamed to LockBackground.jpg) to the same directory. Reboot and that should be it. I used ibrickr, but I guess winscp should be similar when handling iphone files.
