I'm not on a mac, but I'm pretty sure you have to use independence to get out of restore mode. For windows, you can use iBrickr.

got 7.4 and independence and still nto getting the plug and itunes logo off errrr

According to the Dev Team jailbreak readme:

Use iNdependence version 1.2.5 and wait a minute or so. If you are using iTunes 7.5 you will have to get a MobileDevice from a previous version in order to run Independence.

Perhaps you can try iTunes 7.5 again, using a MobileDevice in a previous version? Sorry that you're having so much trouble. I'm not on a Mac, so I dont know if can be of much help. Good luck.
