Hello I am barely new but I do know some things, maybe not as much as others here but I would like to share my word on a few things which I have seen people having problems with. Many of my answers are from other websites or from my own observations and experiences.
I have seen many threads about people scarred if they have 3rd party applications on there phone and they upgrade that it will "brick" their iPhone. In my case through my experiences no it does not. Sure, the applications goes away but it does not brick it. THIS DOES NOT MEAN UPGRADE TO EVERY NEW FIRMWARE THAT COMES OUT WITH 3RD PARTY APPLICATIONS INSTALLED. In order to upgrade firmware I HIGHLY RECOMEND if you have 3rd party applications to restore to firmware 1.1.1 (or whichever your on) and then upgrade. This is the safest way.
What does brick the phone is when it connects to iTunes, the Sim card within the iPhone and the IMEI number of the iPhone attempt to match up in order to work. If you were to place an alien sim card into the iphone without hacking it and you upgraded it in iTunes, it would "brick" it as the IMEI and SIM card would not match.

Myself have not tried out the new firmware, but I have read about it. Where I live it has not been released yet but of course I can get it off the internet but I see no reason why. The only reason I see the firmware was made for was for the Europeans. There is not dozens of European Languages due to the release of the iPhone in Europe with O2 and other companies. All I have read about was that there was a battery image in iTunes, and that jailbreakme.com DOES NOT WORK with it. Other methods have not been made to work yet either. Ringtones are a bit different and there is a custom button which I am not sure about. Something tells me you still cant customize your ringtones for free yet legally through iTunes.
-Should you update?
If you are one of those people who like to be up to date and have the safest iPhone possible, sure go for it. You will miss out on 3rd party applications for now. If you need to read a European language to function, of course its a yes, but if you are reading what I am writing and understanding it perfectly I say stay where you are.
